Happy Monday y’all from the Hungry Southern Belle Team.  We had another gorgeous weekend in Atlanta.  Perfect for outdoor activities!!!  With all of that time spent outside, it’s nice to have easy and healthy recipes to prepare for dinner.  This recipe for a smoked salmon frittata would also double as a fabulous brunch recipe.  You could even play around with the proteins if you didn’t want to use smoked salmon, perhaps substituting with  a chicken sausage, shredded chicken breast or shrimp.  Served with a side of fresh field greens with a little bit of olive oil and vinegar, you’ve got a delicious and healthy meal!  Enjoy y’all!

 

Smoked Salmon Frittata

(Serves 4)

 

Ingredients:

4 eggs

1/4 cup canned coconut milk

3 teaspoons olive oil, divided

1/4 small red onion, finely chopped

1/8 teaspoon sea salt

1/8 teaspoons ground black pepper

4 ounces smoked salmon, flaked into pieces

4 scallions, thinly sliced

4 cups mixed greens

1 teaspoon vinegar (lots of great flavors available)

Instructions:

 

Preheat the oven to 350 degrees.

In a medium bowl, beat the eggs and coconut milk until evenly mixed.

In a 14″ cast-iron skillet (or oven safe skillet) over medium heat, warm 2 teaspoons of the oil.  Add the onion, salt, and pepper and cook for 3 minutes.  Remove the skillet from the heat. Stir the cooked onions, salmon, and scallions into the egg mixture until well combined.

Pour the mixture back into the skillet and bake for 15 minutes, or until puffed and golden brown.  Cool and slice.  Service with a side of mixed greens tossed with the remaining 1 teaspoon oil and the vinegar.
