Basil Walnut Pesto with Gluten Free Pasta – LOW FODMAP
Good morning y’all from the Hungry Southern Belle house! Are you all ready for another easy recipe for the week? This was a huge hit in our house as literally took all of 15 minutes to make. Riche and I both got home from working out and while the gluten free pasta was cooking on the stove, I was able to put my food processor to work to make this flavor packed pesto to mix in once the pasta was drained. If you feel like you need/want some extra protein, this would be delicious with some steamed shrimp or grilled chicken. Enjoy y’all!
Basil Walnut Pesto with Gluten Free Pasta – LOW FODMAP
(Serves 4 – Recipe courtesy of Low FODMAP 28 Day Plan)
Ingredients:
1 pound gluten free pasta (penne or rotini work nicely)
2 cups tightly packed fresh basil leaves
1/2 cup chopped walnuts
1/2 cup grated Parmesan cheese
1/3 cup garlic infused olive oil
Instructions:
Bring a large pot of water to a boil over high heat. Add the penne and cook according to package instruction until al dente, 9 to 11 minutes.
Meanwhile pulse the basil, walnuts, Parmesan cheese and olive oil in a food processor to finely chop and blend the ingredients. Do not puree.
When the pasta is done, drain it in a colander. Toss the hot pasta with pesto. Serve immediately.
