Zucchini Hummus
Hi y’all from the Hungry Southern Belle house! It has been a LONG time since we last posted. As many you know, there’s been lots going on in our house and while it’s kept us from posting, it hasn’t kept us from testing out some yummy new recipes! Here’s a quick one that as been a new favorite in our house! It is low-FODMAP friendly AND delicious! Especially now that there will be a plethora of fresh zucchini at the farmers markets. This is a fabulous alternative to a traditional hummus. It’s SUPER easy to make and stores well in the fridge for a healthy snack. Enjoy y’all!
Zucchini Hummus
Ingredients:
- 2 medium zucchini, peeled and chopped
- ½ cup tahini
- ⅓ cup lemon juice
- ⅓ cup olive oil
- 3 garlic cloves
- 1½ teaspoons cumin
- Salt & pepper to taste
Directions:
Combine all ingredients in the base of a food processor, and process until smooth. Serve with crisp raw veggies, such as carrots, celery sticks, broccoli, cherry tomatoes, or cucumber slices, for dipping.
